About Us
Hi! We are the co-founders María Paz Gardiazabal and Beatriz Irarrázabal.
Our journey began with a simple question: how could we live more sustainably in our own urban environment? We had both spent years drawn to sustainability, food and ways of living more connected to nature — but like so many people living in cities, we didn't have a garden, or even much outdoor space, to grow our own food. That gap led to another question, one that would go on to shape the whole project: is it possible to produce food and manage organic waste at home, without giving up city life? Looking for an answer led us to rethink the role that spaces we normally overlook — balconies, terraces — could play in urban homes.

Meet the founders
Paz has built her career around cultivation and agroecological food production, including her work at Marsano, an agroecological farm in Galicia, where she deepened her knowledge of sustainable, local food systems.
Beatriz brings experience in climate and social impact consulting, as well as fundraising and the design of large-scale projects — always with a focus on generating impact from a strategic perspective.
Barcelona, our first Edible city
Spain has one of Europe's strongest agricultural traditions, and a close relationship with fresh food and outdoor living. At the same time, growing urbanization has moved many people away from the processes behind the food they eat and the resources they use.
That's the gap we saw an opportunity to close: a mild climate, a culture of balconies and terraces, and a growing interest in conscious eating all make Spanish cities fertile ground for home growing.
For new urban farmers
Edible isn't here to replace traditional agriculture, it's here to complement it, helping people take a more active part in producing some of their own food and managing their own organic waste.
